Stuffing can consist of just about anything, the only limit is your own imagination. One night my wife made a chicken and pasta dish & I was trying to limit my carbs, so I decided to mine mostly the chicken and red sauce out to stuff a globe squash ( I threw in a few of the penne pasta pieces, because I just couldn’t resist it). It turned out amazing! I made an Instagram post and a customer asked for the recipe. Well here’s one I just made tonight and my family went nuts over it.
Keep in mind you can modify & substitute a stuffing mix to your hearts content. If a concoction sounds good to you, then stuff a veggie with it and impress yourself and your loved ones. There are countless ways to stuff a veggie and it will be amazing.
- 1 box Rice-a-Roni “Spanish Rice”
- 1 can of diced tomatoes “Italian style”
- 2 tbsp butter
- 2 cups water
- 1 lb Ground hamburger
- 1/2 Green Bell
- 1/2 Jalapeno
- 1/2 white onion
- 3 Garlic Cloves
- 1/2 Fresno Chili
- 1/2 Pasilla Chili
- 1 Pkg Mozzarella Cheese
- Olive Oil
- Salt & Pepper


Mix chopped veggies & ground chuck, lightly saute’/brown all together.





-Set Oven to bake at 400 degrees and slide them in. I baked them for 20 min to start.
