EASY PEACH COBBLER
4 c. peeled, sliced peaches or nectarines
1 c. flour
1 c. sugar
1 stick of cold butter, cut in slices
1 beaten egg
Combine topping ingredients in a bowl with a pastry cutter. Add 2 tbsp. of flour to the peaches and a bit of cinnamon. Put the peaches in 8 x 8 baking dish. Beat the egg and mix it in with the sugar and flour mixture till crumbly. Spread the flour topping evenly over the peaches. Bake at 400 degrees for 30 minutes or a bit longer till the topping is nice and brown.
I usually make double the flour topping but bake a bit longer. Put some foil in the bottom of the oven, the peaches will boil over a bit.
You can also use a bit less sugar.
